When you choose Nebraska beef, you're choosing more than just a cut of meat. You're choosing a commitment to traceability, care, and craftsmanship—values KL Beef Co. has carried for over six generations in Cedar County, Nebraska. We don’t outsource. We don’t buy and re-sell. From birth to harvest, every animal is raised by our family, right here on our land.
This is beef done right.
Raised With Purpose, Not Just for Yield
At KL Beef Co., our animals are born and raised on our own pastures. That means we oversee everything—breeding, feeding, and day-to-day care. Our cattle graze on open range and are grain-finished to create optimal marbling and tenderness.
Unlike large-scale operations, we don’t use hormones. And we don’t finish our cattle on crowded feedlots. We do what’s right for the animal and the land, because we’re in this for the long haul.
Our goal is simple: provide families with real, trustworthy Nebraska beef.
A Family Operation Since 1857
KL Beef Co. is run by the Lammers family, who have been raising cattle in northeast Nebraska since 1857. Our story started with John Lammers, a German immigrant who became known as the "Cattle King" of Cedar County. That legacy lives on today.
We haven’t moved. We haven’t sold out. We still work the same land, raise our own animals, and deliver a product that reflects generations of hands-on experience.
When you order from KL Beef, you’re buying beef from the people who raised it. That’s the difference.
What Makes Our Nebraska Beef Stand Out?
We believe premium beef starts long before it reaches your plate. Here’s what sets KL Beef apart:
-
Pasture-Raised, Grain-Finished — Our cattle roam open pastures and finish on a nutrient-dense grain ration for consistent flavor and tenderness.
-
Dry-Aged — All cuts are dry-aged 14–21 days to naturally concentrate flavor and improve tenderness.
-
Cryovac Vacuum Sealed — Packaging locks in freshness and extends freezer life—our beef is safe frozen for 2–3 years.
-
Harvested Locally — All animals are processed at USDA-inspected facilities within 2 hours of our ranch.
-
Single-Animal Ground Beef — Our ground beef is not blended across animals. Every pound comes from a single animal you can trace back to our pastures.
This is Nebraska beef the way it was meant to be—raised by ranchers, not repackaged by corporations.
Transparency from Ranch to Freezer
Every animal we sell is traceable. We know exactly where it was born, what it was fed, and how it was treated—because we were there every step of the way. That’s not something most beef companies can say.
Whether you’re purchasing a steak or stocking your freezer with a quarter share, you’ll always know who raised it, how it was handled, and what makes it different.
We stand behind every pound.
Buying in Bulk: The Smart Way to Stock Your Freezer
We offer bulk beef options to help families access high-quality meat at an affordable price per pound. Our shares include whole, half, quarter, eighth, and sixteenth beef packages. Each order is custom-cut and packaged to your preferences.

Every package includes:

Custom-cut steaks, roasts, ribs, and ground beef
-
Vacuum-sealed, freezer-ready packaging
-
Full transparency from ranch to delivery
You don’t have to guess what's in your beef—or who handled it. With KL Beef, you know.
Cooking Nebraska Beef at Home
Our dry-aged beef cooks a little differently than typical grocery store meat. Here's what we recommend:
-
Let it rest before cooking—bring it to room temperature.
-
Keep seasoning simple—coarse salt and pepper go a long way.
-
Don’t overcook—aim for 130–135°F for steaks.
-
Use a thermometer—especially for roasts and thick cuts.
-
Let it rest after cooking—5–10 minutes helps juices settle.
These simple steps let the dry-aging and flavor of real Nebraska beef shine through.

Our Promise to You
There’s a lot of confusion in the beef industry—labels that mean nothing, claims that aren’t verified, and products that are processed by facilities hundreds of miles from where the animal lived.
We don’t operate that way.
We’re KL Beef Co., and we raise every animal we sell. If we didn’t raise it, we don’t ship it. Period.
When we say “Nebraska beef,” we mean it. Not just because it was processed here—but because it was raised here, with integrity, by our family.
