We harvest our animals at USDA-inspected facilities within two hours of our ranch. That means low-stress handling, local economy support, and unmatched freshness.
After harvest, each side is dry-aged for 14–21 days—a process that intensifies flavor and enhances tenderness. Then we custom cut each order and package it in Cryovac vacuum-sealed bags, labeled and flash-frozen for long-term freezer storage.
Our beef stays good in the freezer for 2–3 years—and still cooks like it was just processed.
